甘肃特产顶呱呱的火辣呱呱,向外国人介绍这一美食

     呱呱,是天水一带的一种特殊食品。无论是寒风骤起的严冬,还是烈日当头的盛夏,总有那紫红色的呱呱在摊点出售,食客往来不断,生意格外红火。天水呱呱品种繁多,以原料区分有荞麦呱呱、冰豆呱呱、豌豆呱呱和粉面呱呱等,其中最受人们欢迎的是荞麦呱呱。

Gua Gua is a special food in Tianshui. Local people enjoyit regardless of weather, no matter if it is freezing cold winter,or scorching hot summer, the business is always booming.Tianshui Gua Gua has many varieties, there are buckwheat, icebeans, peas and noodle flavor, etc., in which the most popular isthe buckwheat flavor.

如果说西北人喜食酸辣,那么天水呱呱可是典型的辣味小吃。初食者面对满碗流红的呱呱,定会咋舌、冒汗。而当地人尤喜以呱呱为早点,一些人甚至“不可一日无此君”。

但有不少外地游客却总是很遗憾地不能尝试这一地方特色,究其原因,除了通红的辣椒让人望而却步以外,还有就是呱呱是人工用手捏碎、撕碎而成一碗,很多人都觉得不太卫生而错过了一品其味的机会。为此,在上世纪90年代的时候,有人对呱呱的制法也进行过一次改革,改用锅铲子等工具碾碎。但很快遭到了当地人的强烈反对,原因是这样制成的呱呱味道大不如前,不如用手抓成的入味。因此现在部分店铺的做法是在手上戴一双塑料手套,而仍有不少店铺保留了直接用手抓的传统做法。

Northwest people are fond of eating hot and sour food, andTianshui Gua Gua is the most typical spicy snack. If you seesomeone sticking out his tongue and sweating, he must havejust finished a bowl. Local people in particular like to eat it forbreakfast, some people even say they “cannot get along withoutit for just one day”.

However, there are many tourists who will always regretnot trying Gua Gua. The reason lies in two aspects: firstly, thered pepper seems daunting and discouraging; secondly, the food is crushed by chef’s bare hand, which seems unhygienic.

To this end, in the 1990s, some people improved it, bare handcrushing was replaced by tool crushing; however, it soon metwith strong opposition from local people, because the taste waswatered down. Therefore, now some chefs wear a pair of plasticgloves to crush, but there are still many food stalls retaining thetraditional practice of bare hand crushing.

原 料:荞麦粉适量

调 料:辣子油、香油、芥末、酱油、盐、醋、蒜泥各适量

做 法 Cooking method

1.把陇南盛产的荞麦粉制成“荞珍子”,入水浸泡,加工,取其淀粉,然后将淀粉加水入锅,用小火烧煮,直到锅内形成厚厚一层色泽黄亮的呱呱时,方可取出装入盆内加盖,经过回性,即可食用。

1.First roll buckwheat powder into particles, soak inwater, process to get the starch; boil the starch with water under low heat until a thick layer of yellowish crust is formed, that is Gua Gua, take it out and cool down in a container, set aside for later use.

2. 将呱呱撕成小片,再配上辣子油、香油、芥末、酱油、盐、醋、蒜泥等调料即可。
